Nest Egg Merlot

Bird in Hand Nest Egg Merlot is sourced from estate vineyards in the central and northern Adelaide Hills. The Nest Egg label is reserved for the most outstanding wines of any vintage.
The grapes are destemmed and crushed into small open fermenters. During fermentation the juice is pumped over twice daily for seven days. It is then left to macerate on skins for a further two weeks.
If the wine achieves Nest Egg standard it is pressed to French oak barrels to mature for 18 months.
Deep crimson, Bird in Hand Nest Egg Merlot has plum and mulberry flavours, silky texture and a firm tannin finish. Cellaring potential is 10 years.
